- 1 package BUITONI Refrigerated Chicken & Roasted Garlic Tortelloni (20 oz.)
- 4 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 3 cups spring greens lettuce mix
- 1 cup red grape tomatoes
- 1 cup yellow grape tomatoes
- BUITONI Refrigerated Freshly Shredded Parmesan Cheese (5 oz.)
PREPARE pasta according to package directions; drain. Stir in 1 tablespoon olive oil (to prevent sticking) and allow to cool completely.
WHISK remaining 3 tablespoons olive oil, vinegar, mustard, salt and pepper in a large salad bowl.
ADD cooled pasta, spring greens and tomatoes; toss gently to coat. Serve immediately topped with cheese.
