Ingredients
- 1 tablespoon olive oil
- 1 cup sliced leeks
- 1 clove garlic
- 5 1/2 cups chicken broth
- 1 1/2 pounds butternut squash
- 1/2 cup Irish ale
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 package BUITONI Refrigerated Three Cheese Tortellini (9 oz.)
- 2 cups chopped leafy greens (Swiss chard, collards, mustard and/or kale)
Directions:
HEAT oil in a large saucepan over medium heat. Add leeks and garlic; cook, stirring occasionally, for 5 minutes or until leeks are tender. Stir in broth, squash, ale, salt and pepper. Bring to a boil. Reduce heat to medium-low; cook for 10 minutes. Stir tortellini and greens into soup. Cook, stirring occasionally, for 7 minutes.
