When we chose the lobster for our ravioli, it had to be a sweet and succulent wild lobster from the North Atlantic. This lobster, shrimp and custom Impastata Ricotta cheese could then only fill a freshly-made ravioli made from semolina flour and then be drizzled with the lightest of Garlic Butter Sauces. A masterpiece.
